Questions About How To Cook Asparagus

Mandy asks…

How to cook asparagus so it becomes soft and easy to chew?

How to cook asparagus so it doesn't become so fiberish when you eat. I just had an asparagus and pepper omelet but the asparagus was so fiberish it was practically impossible to chew. The fibers were unbreakable. I wonder if it's just the type of asparagus I bought or if I just didn't cook it right.

admin answers:

Thinner asparagus spears are more tender. Cut or break off the woody ends. They're tough no matter what you do. Lay the asparagus spears in a shallow baking dish, drizzle with olive oil, season with salt and pepper, and bake at 375 F until tender. Cooking time depends on how thick the spears are and how much you are cooking, but usually about 20 to 25 minutes, but check them periodically so you don't overcook.

Save the ends for making cream of asparagus soup -- you can simmer them in water for a great flavor, and then remove them and add in fresh asparagus tips.

Paul asks…

How to Cook Asparagus to make it Soft and keep Nutrients?

My family has always boiled asparagus and I love eating it. I know many of the nutrients are lost when you boil it. Is there a way to cook it, still get the softness and keep most of the nutrients? I've tried it in the oven and I really don't care for it crunchy. Please be specific. Thank you.

admin answers:

You could always oven roast it, seasoned with Olive Oil, butter, S&P, or your favorite additional seasonings on 350 degrees, topped with a lose foil cover. Or grill it, with your favorite seasonings, wrapped in parchment paper and tin foil. Both of these applications will result in a steamed effect without losing the nutritional value from the actual boiling process. If these don't work for you, you could always use your microwave, small amount of water, seasonings and parchment paper on top to prevent splattering. May I also suggest buying smaller stalk sized Asparagus, it's younger, more tender and quicker for cooking. Please remember to take off the bottom white part of the stalk, you will know this by when the green easily snaps off, by hand, from the bottom section. Hope this helps you out today, if you need more information, please don't hesitate to email or IM me. Have a great day!

George asks…

what is the best way to cook asparagus?

I ordered some asparagus at Applebees last night and I loved it.. how do I cook it like that?

admin answers:

Sauteed Garlic Asparagus:
INGREDIENTS
3 tablespoons butter or margarine
1 bunch fresh asparagus
3 cloves garlic, chopped
DIRECTIONS
Melt the butter or margarine in a large skillet over medium-high heat. Add the garlic and asparagus spears; cover and cook for 10 minutes, stirring occasionally, or until asparagus is tender. If you like your asparagus well done, reduce heat and cook an additional 10 minutes.

Or

Asparagus and Cashews:
INGREDIENTS
2 tablespoons olive oil
2 tablespoons sesame oil
1 teaspoon minced fresh ginger root
1 bunch asparagus stalks, ends cut
1 tablespoon soy sauce
1/2 cup chopped cashews
DIRECTIONS
Heat olive oil and sesame oil in a wok over low to medium heat. Add ginger, and stir-fry until slightly brown. Add asparagus, and stir-fry for a few minutes before adding soy sauce and cashews. Cook until asparagus is tender but still crisp and bright green, stirring frequently.

Or

Raspberry Asparagus:
INGREDIENTS
1 pound fresh asparagus spears, trimmed
1 (8 ounce) container low-fat raspberry yogurt
1/2 lemon, juiced
DIRECTIONS
Place the asparagus in a steamer basket, and set over about 1 inch of boiling water. Cover, and steam for 5 to 8 minutes, or until tender and bright green.
In a small saucepan, stir together the yogurt and lemon juice. Cook over medium heat until warmed.
Place steamed asparagus onto serving plates, and spoon the sauce over, or serve sauce separately.

ENJOY!

Asparagus and Carmarthen ham with goats' cheese

by Stephen Terry
from Great British Menu

Serves 4-6

Preparation time 30 mins to 1 hour

Cooking time 30 mins to 1 hour

Ingredients
For the asparagus
16 thick asparagus spears, ends peeled
100g/3½oz plain flour
2 free-range eggs, lightly beaten
100g/3½oz panko bread flakes (crunchy Japanese breadcrumbs)
300ml/½ pint rapeseed oil, for deep frying
1 tbsp extra virgin olive oil
For the dressing
200g/7oz Cothi valley fresh goats' cheese, crumbled (or other similar quality crumbly goats' cheese)
3 tbsp double cream
Welsh Halen Môn sea salt from Anglesey (or other similar quality sea salt) and freshly ground black pepper
For the salad
½ lemon, juice only
3 tbsp extra virgin olive oil
Welsh Halen Môn sea salt from Anglesey (or other similar quality sea salt) and freshly ground black pepper
1 bunch dandelion leaves
1 small head tardivo, leaves picked
1 bunch wild rocket
2 breakfast radishes, very thinly sliced
For the ham
200g/7oz Carmarthen ham, or other similar quality cured, air-dried ham

Method
1. For the asparagus - blanch the asparagus in salted boiling water for 2-3 minutes, drain and refresh in iced water. Dip eight of the asparagus spears in flour, then egg and then panko flakes. Dip in the egg mix again and then in the panko flakes, ensuring the asparagus is completely coated, and set aside. Pour the rapeseed oil into a medium saucepan and heat until a small cube of bread turns golden-brown. (CAUTION: do not leave oil unattended. Hot oil can be dangerous.) Carefully lower the coated asparagus into the hot oil and fry until golden-brown. Remove with a slotted spoon and drain on kitchen paper. Heat the olive oil in a griddle pan and griddle the remaining blanched asparagus.
2. For the dressing, place the crumbled cheese in a bowl. Soften the cheese with a splash of warm water from the kettle and the double cream and whisk until smooth. Season with salt and freshly ground black pepper to taste.
3. For the salad, whisk together the lemon juice and olive oil and season, to taste, with salt and freshly ground black pepper. Place the dandelion, tardivo and rocket leaves into a large bowl, add the radish and then pour over the dressing and mix well.
4. For the ham, heat a griddle pan, add the ham and griddle for one minute each side or until crisp.
5. To serve, divide the ham between the serving plates, top with the deep fried asparagus and place a small handful of dressed salad leaves on top. Garnish with the griddled asparagus and pour over the cheese dressing. Serve at once.

Questions About How To Cook Asparagus With Olive Oil

Donna asks…

how should i prepare this asparagus and snap peas for this pasta?

I am making some pasta with veggies for my lunches this week. I usually just cook up some pepper pieces in olive oil and add them to the pasta...but i bought some asparagus and sugar snap pea pods this time. How should i prepare them before I add them to the pasta?

Should I add them to the olive oil? Should I team the asparagus?

admin answers:

You can add them to the oil.

You could also steam them and add after.

Someone else suggested par boil, that would work too.

John asks…

How do you think I did on my new diet today--feedback greatly appreciated!?

This is what I've had:

-2 apples and 1 grapefruit blended with ice to make a smoothie
-90-calorie granola bar
-whole wheat wrap with turkey, pickles, and mustard
-about a cup of asparagus (cooked in vegetable oil because I was out of olive oil)
-2 meatballs made with beef and rice
-about 1/2 cup of black-eyed peas

What do you think? Can I lose weight eating meals similar to this everyday if I start working out and/or running about 30 minutes? I just had a baby and I DESPERATELY need to get this weight off.

Thanks!

admin answers:

You should go to livestrong.com and set up a profile (it's free). It'll let you log your food and will show you your calories, fat, sugar, etc...

About what you ate, just make sure you eat when you're hungry especially if you are exercising. I think you spaced everything out nicely if its the way you typed it, because it will keep your metabolism going

Ruth asks…

Calling all cooks! I need help with an asparagus dish I'm going to make?

Ok, so I am copying this dish I had somewhere but making a few changes. I know the ingredients I want to put in it, but I don't know how to actually go about cooking it.
So, the ingredients are:

Asparagus
Mushrooms
Almonds or Walnuts (what do you think?)
Gorgonzola Cheese
Red Onion
Olive Oil
Jane's Mixed Up Salt (Its a salt mixture w/ herbs and spices)
Pepper

The one I had was served cold, but I would like it to be a hot dish. I want the asparagus on the crispier side, and I plan to mix the gorgonzola in last as I do not want it to melt.
So how should I go about making this? Any other suggestions?
Thanks!

admin answers:

Saute the onion and mushrooms in the olive oil. When they are almost done, add the Asparagus and cook to desired tenderness. Mix well with the salt & pepper and place in dish. Top with the crumbled cheese and sliced almonds. Serve immediately.

Maria asks…

===Is my list of foods DIET approved?===?

I know it's a weird question to ask, but even foods I thought were "healthy" have been getting flack for having fat/carbs that aren't obvious to that food, like veges having so many carbs, it's considered a starch, etc. My diet is moderate calorie, low fat, high protein, moderate carb. I'm not putting how MUCH at a time, but figure if it's protein, 4-6 oz, fruits/veges 1/2 - 3/4 cup, and carbs/grains- whatever the label says a serving is. I'm really just wanting to know that none of these foods have too much hidden bad stuff (fruit with tons of sugar, veggies with fat/sugar, etc)

Veges: Usually bought frozen or canned w/o added salt unless other noted
Asparagus
Carrots (bagged baby)
Peas
French cut Green Beans
Broccoli florets and stems
Cauliflower (fresh or frozen with broccoli)
Baby spinach (bagged)
Iceberg lettuce (head)
Tomatoes all sizes (fresh)
Cooked canned spinach

Carbs:
Brown rice
Wheat bread-Single slice sandwiches (not whole wheat, just brown sandwich bread- I'm not gonna switch, the shape is different!)
Potatoes (in moderation)
Reduced fat wheat crackers (Off brand Wheat Thins)
Pasta side dishes- Made with white pasta and cream sauce- Occasional for obvious reasons!

Protein:
Eggs (not organic- often just the whites, otherwise a yolk:white ratio of 1:3
Canned tuna in water
Bone/Skinless Chicken Breasts
Tilapia fillets
Shrimp
93/7 ground turkey
Low/No fat turkey breast (lunch meat- occasional-can't cook ALL the time, haha.)

Fruit: Bought fresh or in bags or frozen in packages (not canned)
Apples (usually Fuji)
Oranges (they're my crack!)- Sometimes canned mandarin oranges!
Bananas (usually small or 1/2 a medium)
Seedless red/purple grapes
Blueberries (not often- hella expensive!)
Strawberries (fresh/frozen for smoothies)
Peaches (frozen chunks for smoothies)
Mangoes (frozen chunks for smoothies)
Pineapple (frozen chunks for smooties)
Seedless watermelon (when in season or on sale)

Dairy:
Skim milk (it's GRAY o.O)
Nonfat yogurt
American Cheese
Lowfat Shredded cheese

Fat/Misc:
EV Olive oil
nonstick cooking spray
Salt Free seasonings
Margarine

I would love to hear suggestions to add to the list or what to drop from the list (or move to a different category!) If it matters almost EVERYTHING is off brand/great value... Thanks!

admin answers:

I'd say frozen spinach is better than canned spinach, since frozen is usually fresher.
Iceburg lettuce has no nutritional value.
Light tuna has less mercury in it than white tuna. Salmon is as good alternative.
Compared to other fruits, grapes don't have as many vitamins and antioxidents, and they cause acid reflux.
Cream sauce is high in fat, and white pasta has simpler carbs than whole wheat pasta.
Some wheat sandwich bread is as bad as white bread, but there's Oatmeal bread, rye, ezekiel, etc. If you don't like whole wheat.
There's a huge difference between Kraft cheese and the cheese you get sliced at the deli counter.

Questions About How To Cook Asparagus In The Oven

Helen asks…

Cooking Asparagus in the oven?

Can anyone tell me how to cook fresh sparagus in the oven, just very simply, with times and Gas marks.

admin answers:

I roast asparagus all the time in the oven. It's delicious. So much more tastier than steaming it.

Simply clean your asparagus and cut the ends. Next, lay them out on a baking sheet. Drizzle with olive oil and season with salt & pepper. Take a clove or two of garlic, slice it real thin and incorporate this with the asparagus as well. Finally, place in a 425° oven for about 12-15 minutes or until the asparagus is tender. (About half way through the roasting time, take the asparagus out and mix up to ensure even roasting.) After roasting, drizzle the juice of 1/2 a lemon over asparagus and serve.

Mandy asks…

Cooking asparagus in the oven?

Heard of a way to cook it with some butter and parmesain cheese; however, at what degree, how long and covered or not - can anyone help, or other ideas?

admin answers:

Easy! Place cleaned asparagus in a single layer on a baking sheet. Drizzle with olive oil (or butter), plus throw on some chopped garlic, if you'd like. Sprinkle on some salt & pepper. Roast (uncovered) on baking sheet at 400 F for about 10-12 minutes. Sprinkle on some parmesan & return to oven for another 5 minutes or until cheese is melted and golden.
I do it all the time - fave way to make it!

Robert asks…

How do you cook asparagus?

I want the asparagus to be muchy and soft. Do you boil it. If u put it in the oven would it be hard?

admin answers:

I roast my asparagus. I have a rule for both asparagus and brussels sprouts: neither can touch water.

If you want the spears mushy and soft, roast them on a baking tray with a bit of vegetable oil and kosher salt at 375 degrees for 12 to 14 minutes. Check for mushiness and roast a bit longer if you wish.

Michael asks…

How long should I bake stuffed salmon?? 10 pts to best!?

I bought a salmon stuffed with crabmeat from the seafood store. It is about 1.25 lbs. I'm already cooking asparagus in the oven at 400 degrees so how long should I put the salmon in for at that temp? Should I wrap it in foil? Put it in a pan of oil or butter? Thanks!

admin answers:

Since it is only 1.25 Lbs. It must be a thick fillet. Stuffed should take 20-25 minutes.

Linda asks…

how long to cook stuffed beef sirloin roast?

i bought a beef sirloin roast stuffed with asparagus and cheese in the middle. The sirloin is wrapped up around it. I got around .9 lbs of it including the asparagus. Im wondering how long should i cook it in the oven on 400 degrees?

admin answers:

At least 30 minutes if you want it well done, you can even go a little longer for a nice golden crisp top. Do not over cook your worst or it may get a little tough but on that temp 30 should be good.
